
Authentic Greek Gyro Meat
Homemade gyro meat made with ground beef marinated in garlic, oregano, and cumin, baked in a loaf pan until golden. Serve in pita with fresh toppings and tzatziki sauce.

Preheat the oven to 350°F.

Add all gyro meat ingredients (ground beef, garlic powder, salt, pepper, oregano, cumin, olive oil, and red wine vinegar) to the bowl of a stand mixer.

Using the paddle attachment, mix the meat mixture together on medium speed for 5-7 minutes until the mixture is smooth, tacky, and pasty.

Place the meat into a loaf pan and use a spatula to gently press down, removing air pockets.

Place the loaf pan onto a baking sheet to prevent splatter.

Bake for 60 minutes until gyro meat is no longer pink in the center and an instant-read thermometer reads at least 160°F.

Remove from the oven and allow to cool for 15 minutes.

Remove any excess grease with a paper towel.

Thinly slice the meat and serve immediately, or sauté in a hot pan with oil until golden brown and crispy.

If using french fries, cook according to package directions, then toss with olive oil, garlic powder, salt, pepper, and oregano.

To assemble gyros, snip the top of small pitas or cut larger pitas in half.
