Cook the ramen or rice noodles according to package directions. Drain and set aside.

In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, chilli oil, sesame oil, and water until smooth.

Heat a large pan or wok over medium heat. Add minced garlic and ginger, and cook for about 1 minute until fragrant.

Pour the peanut sauce into the pan and stir well. Simmer for 2-3 minutes.
