
Invisible Apple Cake
A beautiful French dessert made by layering thinly sliced apples in a custard-like batter. The apples almost disappear into the cake, hence the name. Serve with powdered sugar, whipped cream, ice cream, or caramel sauce.

Preheat oven to 375°F. Grease and line a loaf pan with parchment paper.

Using a knife or mandoline, slice apples into 1/8-inch slices.

In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.

In a separate small bowl, whisk together melted butter, milk, and vanilla extract.

In a separate large bowl, beat eggs and sugar for 90 seconds on medium speed until pale.

Add half of the flour mixture and mix on low speed until combined.

Add the butter and milk mixture and mix until combined.

Add the remaining flour mixture and mix just until the batter comes together.

Add the sliced apples to the bowl and gently toss until they are evenly coated in the batter.

Layer the apple mixture into the prepared loaf pan. Pour any remaining batter over the top.

Bake for 70-75 minutes until golden brown around the edges and a toothpick comes out clean.
