Cook or heat the noodles according to packet instructions.

Rinse the cooked noodles with cold water to stop overcooking, then drain and set aside.

Whisk together the sugar, soy sauce, dark soy sauce, and vinegar in a bowl until the sugar is dissolved. Set the sauce aside.

Heat a wok or large pan over high heat and add 1 tablespoon of oil.

Add the minced garlic and fry for 20 seconds until fragrant.

Add the chopped choy sum greens to the pan and sauté for 1 to 2 minutes until they begin to wilt.

Push the greens to one side of the pan, then crack the eggs into the other side and scramble them with a wooden spoon.

Toss the eggs and greens together until combined, then transfer to a bowl and set aside.

Bring the pan back to very high heat until it is very hot.

Let the noodles sit for 30 to 40 seconds to allow caramelisation without overcooking.
