Directions

    Spread rock salt on the bottom of a baking tray and place the washed onions on top.

    Bake the onions at 180°C for about 50 minutes or until they start to brown on the outside and become soft in the middle.

    Let the baked onions cool, then cut them open from the top.

    Using a spoon, carefully remove the onion pulp from inside each onion, being careful not to pierce or tear the skin. Place the empty onion shells back on the salt.

    For the onion soup: chop 1 onion thinly and in a small pot, brown it slowly with oil, butter, a bay leaf, and a pinch of salt.

    Cover the pot with a lid and cook on medium heat for about 30 minutes until the onions are caramelized.

    Add 1 spoonful of plain flour to the caramelized onions and cook while stirring for 1-2 minutes.

    Add the white wine to the pot and let the alcohol evaporate.

    Add about 100 ml of water to the pot and bring to a gentle simmer to create a soup consistency.

    To prepare the béchamel: melt butter in a saucepan and add flour.

    Cook the butter and flour mixture for a couple of minutes while stirring on medium heat until the roux turns golden.

    Boil the béchamel for 2 minutes, then remove from the heat.

    Half fill each onion cavity with the caramelized onion soup.

    Gently place 1 egg yolk into the center of each onion, then season with salt.
