
Nobu's Miso Black Cod
A recreation of Nobu's iconic miso black cod – a symbol of high-end Japanese fusion cuisine. This home version provides a much more significant portion for a fraction of restaurant prices.

Mix miso paste, mirin, sake, sugar, and water in a bowl to create the miso glaze. Stir until the sugar dissolves and the mixture is smooth.

Pat the black cod fillets dry with paper towels to remove excess moisture.

Heat vegetable oil in a skillet over medium-high heat until shimmering.

Place the black cod fillets skin-side down in the hot skillet and cook for 3-4 minutes until the skin is crispy.

Flip the fillets carefully and brush generously with the miso glaze on the top side.

Reduce heat to medium and continue cooking for another 3-4 minutes until the fish is cooked through and the glaze caramelizes slightly.

Transfer the miso black cod to serving plates and drizzle any remaining glaze from the pan over the top.
