Place a large knife flat against one cucumber and smack it with your other hand to bruise and crack it open.

Repeat this smacking motion along the full length of the cucumber to crack it all over.

Repeat the smacking process with the remaining cucumbers.

Cut the smacked cucumbers into bite-sized pieces and transfer to a mixing bowl.

In a small bowl, combine salt, sugar, light soy sauce, rice vinegar, sesame oil, minced garlic, chilli oil, and toasted sesame seeds to make the dressing.

Add the chopped red chilli and spring onions to the cucumber pieces in the mixing bowl.
